  • Combine gelatin, ¼ c. sugar and salt.
  • Beat egg yolks, stir in cream and gelatin mixture. Cook in double boiler over hot, not boiling, water, stirring constantly, until mixture coats metal spoon (about 12 minutes). Remove from heat, stir in vanilla and cool until mixture mounds when dropped from a spoon. Beat just enough to make smooth.
  • Beat egg whites u
