Cookielike crust holds colorful jam— you can fix this one in a jiffy

Ingredients

  • ½ c. butter or margarine
  • ½ c. sugar
  • 1 egg
  • 1 c. sifted flour
  • tsp. salt
  • ¼ c. chopped almonds or pecans
  • 1 c. red raspberry jam or preserves
  • ½ c. flaked coconut

Method

  • Combine butter, sugar and egg and thoroughly mix. Add flour, salt and nuts. Press mixture into a 9" pie pan. Spread with jam.
  • Bake in hot oven (400°F.) until lightly browned, about 15 minutes. Cool on cakerack. (Pie is on the thin side.) Serve sprinkled with coconut.

Variation

  • Substitute apricot jam or preserves for the raspberry.
