Turns homey cobblers into company fare—especially good on apple cobbler


  • ½ c. sugar
  • tsp. salt
  • ½ c. thawed frozen orange juice concentrate
  • 2 egg yolks, slightly beaten
  • 1 c. heavy cream, whipped


  • Combine sugar, salt and orange juice in saucepan. Cook over low heat, stirring until sugar dissolves.
  • Gradually beat a little of the orange mixture into egg yolks. Combine with remainder of hot orange mixture. Cook, stirring constantly, until slightly thickened, about 8 to 10 minutes. Cool.
  • About an hour before mealtime, fold in whipped cream. Chill.
