You’re lucky if you have leftovers, for these make tasty cold sandwiches


  • 1 lb. ground lean beef
  • ½ c. chopped onion
  • ¼ c. chopped green pepper
  • c. biscuit mix
  • 1 tsp. salt
  • ¼ tsp. pepper
  • c. ketchup
  • 3 tblsp. butter or margarine
  • c. milk
  • 1 (10½ oz.) can beef-mushroom gravy (optional)


  • Cook beef, onion and green pepper in skillet until beef is browned. Pour off excess fat.
  • Add ¼ c. prepared biscuit mix, salt, pepper and ketchup. Cook, stirring frequently, several minutes.
  • Cut butter into remaining 2 c. biscuit mix, until mixture is crumbly. Blend in milk. Turn out on board dusted with a little biscuit mix and knead 8 to 10 times.
  • Divide dough in half. Roll each half into a 10" square. Divide each into 4 squares. Top each square with about ⅓ c. beef filling. Fold over comer to comer to make triangles. Seal edges and cut steam vents in top.
  • Bake on greased baking sheet in hot oven (400°F.) until browned as desired, about 15 minutes. Serve topped with hot beef-mushroom gravy.
