Something different, colorful and tasty to do with ever popular ground beef


  • 1 (1 lb.) can tomatoes
  • 1 lb. ground beef chuck
  • 1 tsp. salt
  • ¼ tsp. pepper
  • ½ c. soft bread crumbs
  • c. finely chopped onion
  • 1 clove garlic, minced
  • ½ tsp. dried parsley
  • ¼ tsp. orégano
  • ½ c. shredded Mozzarella cheese


  • Drain tomatoes, reserving juice. Measure ½ c. juice, adding water if necessary.
  • Combine ground beef, salt, pepper, bread crumbs, onion, garlic and tomato juice. Press into a 9" pie pan, lining pan.
  • Bake in moderate oven (375°F.) 15 minutes. Drain off fat.
  • Cut up tomatoes and place in beef pie crust. Sprinkle with parsley, orégano and cheese. Return to oven and bake 15 minutes. Cut in wedges.
