Ingredients

  • 1 (3 lb.) broiler-fryer, cut up
  • 3 c. water
  • 3

Method

  • Simmer chicken with water, celery tops, 1 tsp. salt and peppercorns until tender, about 1 hour. Remove from broth; cool slightly. Strain broth and make gravy (recipe follows).
  • Slip skin from chicken and remove from bones while still warm. Cut into bite-size pieces and combine with peas, pimiento and 2 c. Chicken Gravy.
  • Sift flour and 1 tsp. salt in bowl
