Ingredients

  • ¼ c. chopped onion
  • ¼ c. sliced carrots
  • ½ c.

Method

  • Combine onion, carrots, celery, parsley, salt, peppercorns and boiling water in saucepan. Bring to a boil and boil 5 minutes.
  • Add fillets, cover and simmer gently until tender and flaky, 7 to 10 minutes. Remove fish and place in a greased 9" square pan.
