Ingredients: 1 (35-ounce) can tomatoes with tomato paste and basil leaf or use 4 cups canned imported tomatoes and three tablespoons tomato paste; 1 cup water; 1 tablespoon chili paste with garlic, available in Chinese and oriental groceries, optional; 1 teaspoon celery salt; Salt and freshly ground pepper to taste; 3 pounds ground beef; 1 tablespoon red wine vinegar; ¼ pound beef suet from the kidney, or 3 tablespoons bacon fat; 1 tablespoon crushed dried oregano; 3 tablespoons finely chopped garlic; 1 teaspoon ground cumin; 6 tablespoons chili powder; 1½ cups finely chopped green pepper; 3 cups chopped onion; ¾ teaspoon ground pepper

Put the suet in a large deep casserole or Dutch oven. Cook until rendered of fat. Scrape out solids. Pour off all but 3 tablespoons of fat.

Add the onion and green pepper. Cook until the onion is wilted.
