Ingredients

  • ¼ pound beef suet from the kidney, or 3 tablespoons bacon fat

Method

  1. Put the suet in a large deep casserole or Dutch oven. Cook until rendered of fat. Scrape out solids. Pour off all but 3 tablespoons of fat.
  2. Add the onion and green pepper. Cook until the onion is wilted.
  3. Add the meat. Using a heavy metal spoon, cook, chopping
