This is a sweet-tasting kraut and a perfect way to use your root vegetables. Many people, including myself, do not use enough of these in their cooking even though they are so common in northern Europe. Root vegetables are an amazingly nourishing food that are wonderful to include in your diet, especially in the winter when we all need more warmth and sweetness in our lives. Have this with vegetarian, fish and meat dishes alike. It is a brilliant kraut to add to soups, stews and casseroles.
