Beetroot has many amazing health benefits. It is said to strengthen and increase resilience. It contains iron, magnesium, folate, betaine and nitrates. It is a great blood cleanser and is a very effective natural remedy for lowering high blood pressure. Studies also show that the increased blood flow caused by eating beetroot will help blood flow to your brain and it may be helpful in the prevention of Alzheimer’s and other forms of dementia. It is also a great antioxidant. If you like beetroot you will absolutely love this wonderfully tasty fermentation.

Beetroots are sweet and ferment quickly. I don’t usually mix beetroots with anything else as on their own they create a liquid that is sweet and beautifully aromatic and tasty. However, when using only beetroots, the ferment doesn’t keep for very long. To increase the preservation, you can mix it with a little bit of cabbage and perhaps onion. Apart from cabbage, beetroot doesn’t go well with other vegetables. It is best to do smaller batches of this as it doesn’t keep.

Beetroot kraut is delicious with a salad, and I love it with cheese. Adding some crème frâiche takes it to another level.
