Wow! I first tried fermented wild garlic at my local farmer’s market. There is a stall selling fermented foods and they had experimented with fermenting wild garlic and it was just delicious. I immediately had to go and pick some for my own to ferment – where I live the countryside is absolutely overgrown with wild garlic in early spring so there is no shortage of it and it is free if you pick it yourself. Some farmer’s markets and shops sell fresh wild garlic too.
