You can use pretty much any vegetable you have to hand for this recipe. Try for example cauliflower, celery, garlic cloves, peppers, carrots and broccoli. Add herbs like dill, caraway seeds, mustard seeds, cumin and coriander. These pickles are a good accompaniment to most meals, as a digestive aid.

Ingredients

  • 1 kg/ lb mixed vegetables
  • 30 g/2

Method

  1. Make the brine by melting the salt in the water. You might have to warm the water up a little to do this. Let cool.
  2. Wash the vegetables and cut away any bad bits. Peel them if you need to. Cut the vegetables into your preferred size.
  3. Put the vegetables into the clean fermentation jar, pressing them down as hard as possible without damaging them.
