Method

Place the almonds, garlic, salt and 1 cup (250 mL/8 fl oz) of water in the food processor and blend until the mixture is a paste. Briefly soak the breadcrumbs in some additional water and drain. Add the breadcrumbs to the almond paste in the food processor. Continue to process adding first the oil in a stream (as for mayonnaise), and then the sherry vinegar.
