Despite being a little time consuming to prepare, the advantage of these tasty savouries is that they can be made in advance and baked in the oven as required. It is worth noting that they are suitable for vegetarians.

Ingredients

  • sprig of fresh mint

Method

  1. Place the sprig of mint into a pan of salted water and bring to the boil. When boiling, add the peas and cook for 2 minutes. Pour into a colander to drain, then remove and discard the mint.
  2. Heat the oil in a frying pan over low heat, add the onion and cook for 7 minutes, or until soft and translucent. Increase the heat to medium, add the peas and potato and sti
