The fried sesame seeds enclosing the tasty prawn mixture will give a strong, distinctive flavour and a lovely golden brown colour to these delicious savoury snacks.

Ingredients

  • 750 g ( lb) large raw prawns
  • 1 tablespoon oil

Method

  1. Remove the shells from the prawns. Take each prawn and make a shallow cut along the back with a small knife, then carefully pull out the dark vein with the tip of the knife. Pat dry with paper towels.
  2. Put the prawns in a food processor and process to a coarse purée. Transfer to a bowl and add the oil, garlic, ginger, salt, sugar, coriander and cornflour and mix
