This is the perfect way to keep truffle - nothing goes to waste and the truffle flavour is preserved in the butter, being released when it cooks.

Ingredients

  • offcuts of shaved fresh truffle - as many as you can get your hands on
  • 125 g unsalted butter
  • 2 cloves

Method

Place all the ingredients in a bowl and blend with a stick blender or spoon until smooth. Wrap in plastic film and roll into a sausage shape, so you can cut off slices as you need them. Keeps in the refrigerator for up to 2 weeks.
