This is a delightful dish made up of two ingredients that many people usually try to stay clear of. Although a day’s marinating is involved, I still count it as ‘fast’ as the actual work involved is so quick and easy. Earthy beetroot needn’t be at all boring, but most people only know it in its pickled form and never try it any other way. Anchovies come in all sorts of guises. For this dish I prefer the Nardin Spanish smoked anchovies which come in a can and have a short shelf-life, but tas
