This cheese sauce is so darn tasty, you won’t be able to tell it’s made from veggies and nuts. A nutrient-dense version of mac that your kids will devour, guaranteed! In fact, this entire recipe would be vegan if I used nutritional yeast and vegan cheese, but daddy needs his Parmigiano-Reggiano.

Ingredients

  • ½ large head of cauliflower
  • 1 heaping cup raw cashews
  • ¾ cup

Method

Preheat oven to 400°F and bring a medium size pot of water to a boil. Cut the cauliflower into large bite-size florets and season the boiling water with 1 tablespoon of salt. Boil the cashews and cauliflower until the florets are soft, but not extremely mushy, about 8 to 10 minutes.
