Ingredients

  • 1 lb. extra-lean ground beef
  • 2 14½-oz. cans fat-free,

Method

  1. In a nonstick skillet over medium heat, cook beef until no longer pink. Drain.
  2. Place beef in slow cooker.
  3. Add remaining ingredients except black beans and rice.
  4. Cover. Cook on High 1 hour.
  5. Reduce to Low. Cook 4–5 hours, or until vegetables are tender.
  6. Add beans and rice.
  7. Cook 1 hour longer on Low, or until heate
