Ingredients

  • 1 lb. dry beans, assorted
  • 2 cups fat-free vegetable broth
  • ½ c

Method

  1. Sort and rinse beans and soak overnight in water. Drain. Place in slow cooker.
  2. Add vegetable juice, wine, soy sauce, and apple or pineapple juice.
  3. Cover with vegetable stock or water.
  4. Cover. Cook on High 2 hours.
  5. Add vegetables, herbs, and spices.
  6. Cover cooker. Cook on Low 5–6 hours, or until carrots and parsnips are tend
