Ingredients

  • 1 large onion, chopped
  • 1 Tbsp. margarine
  • 1 clove garli

Method

  1. Sauté onion in skillet with margarine until tender.
  2. Add garlic, chili powder, and oregano. Cook for 30 seconds. Pour into slow cooker.
  3. Add remaining ingredients except kale, rice, and beans.
  4. Cover. Cook on Low 7 hours, or on High 3–4 hours.
  5. Cut kale stalks into small pieces and chop leaves coarsely.
  6. Add to soup with rice
