1½ lbs. boneless, skinless chicken thighs, cubed
1 Tbsp. oil

- Cook chicken pieces in oil in skillet until no longer pink.
- Run hot water over okra until pieces separate easily.
- Combine all ingredients but cilantro in slow cooker.
- Cover. Cook on Low 6–8 hours. Stir in cilantro before serving.
