Ingredients

  • 4 medium carrots, thinly sliced
  • 2 celery ribs, chopped
  • 1 medium onion, chopped
  • 2 cups fully cooked ham cubes, trimmed of fat
  • cups dried navy beans
  • 1.68-oz. pkg. dry vegetable soup mix
  • 1 envelope dry onion soup mix
  • 1 bay leaf
  • ½ tsp. black pepper
  • 8 cups water
  • 1 tsp. salt, optional

Ideal Slow Cooker Size: 6-Quart

Method

  1. Combine all ingredients in slow cooker.
  2. Cover. Cook on Low 9–10 hours.
  3. Discard bay leaf before serving.

Variation

If you like the taste, and your diet allows, you may want to substitute smoked turkey sausage or kielbasa in place of the ham.
