Ingredients

  • 3 48-oz. cans low-fat, low-sodium chicken broth
  • 2 medium onions, chopped
  • 5 celery ribs, chopped
  • 5 parsnips, chopped
  • 1 head (8 cups) cabbage, shredded
  • 4 bell peppers (red or green), chopped
  • 8 ozs. mushrooms, chopped
  • 10-oz. pkg. spinach, chopped
  • 10-oz. pkg. frozen broccoli florets
  • 10-oz. pkg. cauliflower
  • 2–3 pieces chopped gingerroot
  • 14½-oz. can crushed tomatoes
  • 1 Tbsp. black pepper
  • 1 Tbsp. salt

Ideal Slow Cooker Size: 7-Quart, or 2 4-Quart

Method

  1. Combine all ingredients in slow cooker.
  2. Cover. Cook on Low 6–8 hours.
