Ingredients

  • 2 cups cream-style corn
  • 1 cup peeled and chopped potatoes
  • 1 cup peeled and chopped carrots
  • 2 14½-oz. cans vegetable or chicken broth
  • 16-oz. jar processed cheese

Ideal Slow Cooker Size: 3-Quart

Method

  1. Combine all ingredients except cheese in the slow cooker.
  2. Cover and cook on Low 8–10 hours, or on High 4–5 hours.
  3. Thirty to 60 minutes before serving, stir in the cheese. Then cook on High for 30–60 minutes to melt and blend the cheese.

Variation

Add 1 tsp. celery seed, ½ tsp. black pepper, and ½ cup chopped onion to step one.
