Cream of Broccoli and Mushroom Soup

  • 8 ozs. fresh mushrooms, sliced
  • 2 lbs. fresh broccoli
  • 3 10¾-oz. cans 98% fat-free cream of broccoli soup
  • ½ tsp. dried thyme leaves, crushed, optional
  • 3 bay leaves, optional
  • 1 pint fat-free half-and-half
  • 4 ozs. extra-lean smoked ham, chopped
  • ¼ tsp. black pepper

Ideal Slow Cooker Size: 5–6-Quart


  1. Combine all ingredients in slow cooker.
  2. Cook on Low 6–8 hours, or on High 3½–4 hours.
  3. Remove bay leaves before serving.
