Ingredients

  • 1 medium onion, diced
  • 1 medium green bell pepper, diced
  • 1 clove garlic, minced
  • 1 cup diced carrots
  • 14½-oz. can low-sodium diced Italian tomatoes
  • cups low-sodium tomato juice
  • 1 quart low-fat, low-sodium chicken broth
  • 3 cups corn, frozen or canned
  • 4-oz. can chopped chilies, undrained
  • 1 tsp. chili powder
  • tsp. ground cumin
  • dash cayenne powder

Ideal Slow Cooker Size: 4-Quart

Method

  1. Combine all ingredients in slow cooker.
  2. Cover. Cook on Low 6–8 hours.
