Ingredients

  • 45-oz. can chicken broth
  • 1 medium butternut squash, peeled and cubed
  • 1 small onion, chopped
  • 1 tsp. ground ginger
  • 1 tsp. garlic, minced, optional
  • ¼ tsp. nutmeg, optional

Ideal Slow Cooker Size: 4–5-Quart

Method

  1. Place chicken broth and squash in slow cooker. Add remaining ingredients.
  2. Cover and cook on High 4 hours, or on Low 6–8 hours, or until squash is tender.
