Ingredients

  • 1 cup chopped onions
  • 3 cloves garlic, minced
  • 5 cups fat-free, low-sodium chicken broth
  • 1 cup dried lentils
  • ½ cup chopped carrots
  • 2 bay leaves
  • 3 cups chopped Swiss chard
  • cups chopped potatoes
  • 1 cup chopped ham
  • 14½-oz. can low-sodium diced tomatoes
  • 1 tsp. dried basil
  • ½ tsp. dried thyme
  • ½ tsp. black pepper
  • 3 Tbsp. chopped fresh parsley

Ideal Slow Cooker Size: 4-Quart

Method

  1. Combine all ingredients except fresh parsley in slow cooker.
  2. Cover. Cook on Low 7–9 hours.
  3. Stir in fresh parsley and serve.
