Ingredients

  • 3–4 lbs. beef short ribs
  • 32-oz. bag or 27-oz. can sauerkraut, drained
  • 2 Tbsp. caraway seeds
  • ¼ cup water

Ideal Slow Cooker Size: 6-Quart

Method

  1. Put ribs in 6-quart slow cooker.
  2. Place sauerkraut and caraway seeds on top of ribs.
  3. Pour in water.
  4. Cover. Cook on High 3–4 hours, or on Low 7–8 hours.
  5. Serve with mashed potatoes.

Variation

If you really enjoy sauerkraut, double the amount of sauerkraut, and divide the recipe between 2 4–5-quart cookers.
