Tomato-y Mexican Pot Roast

  • cups chunky salsa
  • 6-oz. can tomato paste
  • 1 envelope dry taco seasoning mix
  • 1 cup water
  • 3-lb. beef chuck roast
  • ½ cup chopped cilantro

Ideal Slow Cooker Size: 5-Quart


  1. In a mixing bowl, combine first four ingredients.
  2. Place roast in slow cooker and pour salsa mixture over top.
  3. Cover and cook on Low 8–10 hours, or until beef is tender but not dry. Remove to a platter.
  4. Stir cilantro into sauce before serving with beef.
