Mexicali Round Steak

  • lbs. round steak, trimmed of fat
  • 1 cup frozen corn, thawed
  • ½–1 cup fresh cilantro, chopped, according to your taste preference
  • ½ cup low-sodium, fat-free beef broth
  • 3 ribs celery, sliced
  • 1 large onion, sliced
  • 20-oz. jar salsa
  • 15-oz. can black beans or pinto beans, rinsed and drained
  • 1 cup fat-free cheddar cheese

Ideal Slow Cooker Size: 5-Quart


  1. Cut beef into 6 pieces. Place in slow cooker.
  2. Combine remaining ingredients, except cheese, and pour over beef.
  3. Cover. Cook on Low 8–9 hours.
  4. Sprinkle with cheese before serving.
