Ingredients

  • 1½–2 lbs. round beef steak
  • 2 Tbsp. oil
  • ¼ cup soy sauce
  • 1 cup chopped onions
  • 1 garlic clove, minced
  • 1 tsp. sugar
  • ½ tsp. salt
  • ¼ tsp. pepper
  • ¼ tsp. ground ginger
  • 4 tomatoes, cut in eighths, or 16-oz. can tomatoes
  • 2 large green peppers, cut in strips
  • ½ cup cold water
  • 1 Tbsp. cornstarch

Ideal Slow Cooker Size: 4-Quart

Method

  1. Cut beef into 3-inch × 1-inch strips. Brown in oil in skillet. Drain. Transfer to slow cooker.
  2. In separate bowl, combine soy sauce, onions, garlic, sugar, salt, pepper, and ginger. Pour over beef.
  3. Cover. Cook on Low 5–6 hours.
  4. Add tomatoes and green peppers. Cook 1 hour longer.
  5. Combine cold water and cornstarch to make paste. Stir into slow cooker. Cook on High until thickened.
  6. Serve over noodles or rice.
