Beef Tongue

  • 1 beef tongue, fresh or smoked
  • 2 scant Tbsp. salt
  • cups water
  • 1 bay leaf
  • 2 lemons, squeezed, or 2 onions quartered
  • 6 peppercorns

Ideal Slow Cooker Size: 4–5-Quart


  1. Place washed tongue in slow cooker.
  2. In a bowl, mix all remaining ingredients together. Pour over tongue.
  3. Cover and cook on Low 7–8 hours, or until the meat is tender. Cool until you’re able to handle the meat, and then remove the outer skin by pulling on it gently.
  4. Slice meat and serve hot.
  5. Use chilled leftovers in sandwiches.
