Ingredients

  • 2 lbs. extra-lean stewing beef cubes, trimmed of fat
  • 5–6 carrots, cut in 1-inch pieces
  • 1 large onion, cut in chunks
  • 3 ribs celery, sliced
  • 6 medium tomatoes, cut up and gently mashed
  • ½ cup quick-cooking tapioca
  • 1 whole clove, or ¼–½ tsp. ground cloves
  • 1 tsp. dried basil
  • ½ tsp. dried oregano
  • 2 bay leaves
  • 2 tsp. salt
  • ½ tsp. black pepper
  • 3–4 potatoes, cubed

Ideal Slow Cooker Size: 6–7-Quart

Method

  1. Place all ingredients in slow cooker. Mix together well.
  2. Cover. Cook on High 5½–6 hours.
