Ingredients

  • 3 medium potatoes, sliced
  • 3 carrots, sliced
  • 1 small onion, sliced
  • 2 Tbsp. dry rice
  • 1 tsp. salt
  • ½ tsp. pepper
  • 1 lb. ground beef, browned and drained
  • 1½–2 cups tomato juice, as needed to keep dish from getting too dry

Ideal Slow Cooker Size: 4-Quart

Method

  1. Combine all ingredients in slow cooker.
  2. Cover. Cook on Low 6–8 hours.
