Ingredients

  • 1 lb. lean ground beef
  • ½ cup chopped onion
  • 16-oz. can whole-kernel corn, drained
  • 16-oz. can kidney beans, drained
  • 16-oz. can diced tomatoes
  • ½ cup shredded cheddar cheese, optional

Ideal Slow Cooker Size: 2-Quart

Method

  1. Brown beef and onion in a nonstick skillet until no longer pink. Drain. Place mixture in your slow cooker.
  2. Layer in all remaining ingredients except the cheese.
  3. Cover and cook on Low 2–4 hours, or until thoroughly hot.
  4. Serve as is, or over a bed of rice or noodles. Sprinkle each serving with cheese, if you wish.
