Hamburger Rice Casserole

Ingredients

  • ½ lb. ground beef
  • 1 onion, chopped
  • 1 cup diced celery
  • 1 tsp. dried basil
  • 1 tsp. dried oregano
  • 10¾-oz. can cream of mushroom soup
  • 1 soup can water
  • 4 cups rice, cooked
  • 4-oz. can mushroom pieces, drained
  • Velveeta cheese slices

Ideal Slow Cooker Size: 4-Quart

Method

  1. Brown ground beef, onion, and celery in skillet. Season with basil and oregano.
  2. Combine soup and water in bowl.
  3. In well greased slow cooker, layer half of rice, half of mushrooms, half of ground-beef mixture, and half of soup. Repeat layers.
  4. Cover. Cook on High 4 hours.
  5. Top with cheese 30 minutes before serving.
  6. This casserole, served with cornbread and applesauce, makes a well-rounded meal that is quick and easy to prepare and well-received by children and adults.
