Beef and Pepper Rice

Ingredients

  • 1 lb. ground beef
  • 2 green peppers, or 1 green and 1 red pepper, coarsely chopped
  • 1 cup chopped onions
  • 1 cup brown rice, uncooked
  • 2 beef bouillon cubes, crushed
  • 3 cups water
  • 1 Tbsp. soy sauce

Ideal Slow Cooker Size: 3-Quart

Method

  1. Brown beef in skillet. Drain.
  2. Combine all ingredients in slow cooker. Mix well.
  3. Cover. Cook on Low 5–6 hours or on High 3 hours, or until liquid is absorbed.
