African Beef Curry

Ingredients

  • 1 lb. extra-lean ground beef, browned
  • 1 large onion, thinly sliced
  • 1 green bell pepper, diced
  • 1 tomato, peeled and diced
  • 1 apple, peeled, cored, and diced
  • 1–2 tsp. curry (or more to taste)
  • 4 cups prepared rice

Ideal Slow Cooker Size: 3-Quart

Method

  1. Spray slow cooker with fat-free cooking spray.
  2. Add all ingredients except rice in slow cooker and mix well.
  3. Cover and cook on High 6–8 hours.
  4. Serve over hot rice.

Per Serving: 340 calories (70 calories from fat), 7g total fat (3g saturated, 0g trans), 30mg cholesterol, 50mg sodium, 47g total carbohydrate (2g fiber, 6g sugar), 20g protein, 6%DV vitamin A, 20%DV vitamin C, 4%DV calcium, 20%DV iron.

Variation

You can thicken this by stirring in 6-oz. can of tomato paste in Step 2, if you wish.
