Beef and Noodle Casserole

Ingredients

  • 1 lb. extra-lean ground beef
  • 1 medium onion, chopped
  • 1 medium green bell pepper, chopped
  • 17-oz. can whole-kernel corn, drained
  • 4-oz. can mushroom stems and pieces, drained
  • 1 tsp. salt
  • ¼ tsp. black pepper
  • 11-oz. jar salsa
  • 5 cups dry medium egg noodles, cooked
  • 28-oz. can low-sodium diced tomatoes, undrained
  • 1 cup low-fat shredded cheddar cheese

Ideal Slow Cooker Size: 4-Quart

Method

  1. Brown ground beef and onion in nonstick skillet over medium heat. Transfer to slow cooker.
  2. Top with remaining ingredients in order listed.
  3. Cover. Cook on Low 4 hours.
