Stuffed “Baked” Topping

Ingredients

  • 3 lbs. ground beef
  • 1 cup chopped green peppers
  • ½ cup chopped onions
  • 6 Tbsp. butter
  • ¼ cup flour
  • 3 cups milk
  • ½ cup pimento or chopped sweet red peppers
  • ¾ lb. cheddar cheese
  • ¾ lb. your favorite mild cheese
  • ½ tsp. hot pepper sauce
  • ¼ tsp. dry mustard
  • salt to taste
  • 12 baked potatoes

Ideal Slow Cooker Size: 5-Quart

Method

  1. Brown ground beef, green peppers, and onions in butter. Transfer mixture to slow cooker, reserving drippings.
  2. Stir flour into drippings. Slowly add milk. Cook until thickened.
  3. Add pimento, cheeses, and seasonings. Pour over ingredients in slow cooker.
  4. Cover. Heat on Low.
  5. Serve over baked potatoes, each one split open on an individual dinner plate.
