Tortilla Casserole

  • 4–6 white or whole wheat tortillas, divided
  • 1 lb. ground beef
  • 1 envelope dry taco seasoning
  • 16-oz. can fat-free refried beans
  • cups (6 ozs.) shredded low-fat cheese of your choice, divided
  • 3–4 Tbsp. sour cream, optional

Ideal Slow Cooker Size: 3-Quart


  1. Spray the inside of the cooker with nonstick cooking spray. Tear about ¾ of the tortillas into pieces and line the sides and bottom of the slow cooker.
  2. Brown the ground beef in a nonstick skillet. Drain. Return to skillet and mix in taco seasoning.
  3. Layer refried beans, browned and seasoned meat, 1 cup cheese, and sour cream if you wish, over tortilla pieces.
  4. Place remaining tortilla pieces on top.
  5. Sprinkle with remaining cheese. Cover and cook on Low 3–4 hours.
