Just-One-More Meatball

Ingredients

  • 2 lbs. ground beef
  • 2 eggs
  • 1 small onion, chopped
  • ¼ cup milk
  • cup crushed crackers (equal to one packaged column of saltines)
  • 1 tsp. prepared mustard
  • 1 tsp. salt
  • ½ tsp. pepper
  • oil
  • cups tomato juice
  • cup vinegar
  • 1 Tbsp. soy sauce
  • 1 Tbsp. Worcestershire sauce
  • ¾ cup brown sugar
  • 2 Tbsp. cornstarch
  • 1 tsp. prepared mustard

Ideal Slow Cooker Size: 5-Quart

Method

  1. Combine beef, eggs, onion, milk, crackers, 1 tsp. mustard, salt, and pepper. Form into small balls. Brown in oil in skillet. Place in slow cooker.
  2. Combine remaining ingredients. Pour over meatballs.
  3. Cover. Cook on High 2 hours. Stir well. Cook an additional 2 hours.
