Savory Meat Loaf

Ingredients

  • 2 lbs. ground beef or turkey
  • 1 cup dry rolled oats
  • tomato juice (just enough to moisten meat if needed)
  • 2 eggs
  • 1 onion, diced
  • 1 Tbsp. prepared mustard
  • 1 tsp. garlic salt
  • 2 Tbsp. ketchup
  • 1 Tbsp. Worcestershire sauce
  • 1 tsp. salt

Sauce

  • 26-oz. can or 2 10¾-oz. cans mushroom soup
  • 6–10 fresh mushrooms, diced
  • 1 Tbsp. onion flakes
  • half soup can water
  • ¼ tsp. salt
  • tsp. pepper

Ideal Slow Cooker Size: 4-Quart

Method

  1. Combine all meat loaf ingredients. Shape into either a round or an oval loaf, to fit the shape of your slow cooker, and place in greased cooker.
  2. Cover. Cook on High 1 hour.
  3. Combine sauce ingredients. Pour over meat loaf.
  4. Cover. Cook on Low 6 hours.
