Ingredients

  • 2 medium raw sweet potatoes, peeled and cut into ¼-inch thick slices
  • 8 boneless, skinless chicken thighs
  • 8-oz.

Method

  1. Place sweet potato slices in slow cooker.
  2. Rinse and dry chicken pieces. Arrange on top of the potatoes.
  3. Spoon marmalade over the chicken and potatoes.
  4. Pour water over all. Season with salt and pepper.
  5. Cover and cook on High 1 hour, and then turn to Low and cook 4–5 hours, or until potatoes and chicken are both tender.
