Ingredients

  • 4 large green, red, or yellow bell peppers
  • ½ cup quick-cooking rice

Method

  1. Cut tops off peppers (reserve) and remove seeds. Stand peppers up in slow cooker.
  2. Mix remaining ingredients in a bowl. Stuff peppers.
  3. Place pepper tops back on the peppers. Pour remaining ingredients over the stuffed peppers and work down in between the peppers.
  4. Cover. Cook on Low 6–8 hours, or until the peppers are done to your liking.
