Ingredients

  • 4 cups unpeeled, sliced zucchini
  • 1 cup fat-free sour cream
  • ¼ cup

Method

  1. Parboil zucchini in microwave for 2–3 minutes. Turn into slow cooker sprayed with non-fat cooking spray.
  2. Combine sour cream, milk, onions, and salt. Pour over zucchini and stir gently.
  3. Cover. Cook on Low 1–1½ hours.
  4. Sprinkle cheese over vegetables 30 minutes before serving.
