Ingredients

  • lbs. medium red potatoes
  • ¼ cup water
  • 2 Tbsp.

Method

  1. Cut a strip of peel from around the middle of each potato. Place potatoes and water in slow cooker.
  2. Cover. Cook on High 2½–3 hours.
  3. Drain.
  4. Combine butter, lemon juice, chives, and parsley. Pour over potatoes. Toss to coat.
  5. Season with salt and pepper.
