Ingredients

  • 2 cups dried red beans
  • water
  • ¾ cup brown rice, uncooked

Method

  1. Place dried beans in slow cooker and cover with water. Allow to soak for 8 hours or overnight. Drain. Discard soaking water.
  2. Return soaked beans to cooker. Stir in all remaining ingredients.
  3. Cover and cook on Low 6 hours, or until all vegetables are tender.
